GASTRONOMY

In 2013, Gustu and Wildlife Conservation Society (WCS) began a joint effort aimed at discovering the potential and developing the relationship between Bolivian food systems and biological and cultural conservation.

Gustu looks for new and innovative ingredients, providing opportunities for producers and highlighting their daily work, and WCS works for the conservation of Bolivian biodiversity through a series of long-term partnerships with local indigenous communities, many of which are already engaged in efforts to sustainably produce high-quality ingredients with potential for gastronomic innovation.

GUSTU

Gustu ("flavor" in Quechua) is a Bolivian haute cuisine restaurant that works solely and exclusively with Bolivian products. The work is based on a deep respect for the local pantry and the natural availability of the products from the different ecosystems of the country.

WCS

With 125 years of history and extensive experience in the exploration and protection of outstanding biodiversity landscapes across the planet, WCS generates valuable scientific knowledge and conserves emblematic wild animals. WCS has contributed to the creation and management of protected areas and the development of experiences with local communities in the conservation of their territorial spaces and sustainable livelihoods.
